This flight attendant’s pastries and cookies are to crave for

The quarantine period over in Metro Manila got everyone stuck at home. During that time, commercial flights were halted. However, some flight attendants found ways and means to do something productive which also helped them push forward.

Philippine Airlines flight attendant Melody Sy is one of those flight attendants who used this period to turn her passion for baking into a business.

Melody’s business is named Rolling Pin Ph, which started as a passion project during this quarantine period. More than a passion, it also became a business that helped augment her income. Being a graduate from from the De La Salle College of Saint Benilde and Global Culinary and Hospitality Academy with a degree in Culinary Arts, Melody saw the opportunity to apply everything she learned.

Being a flight attendant also helped Melody come up with different ideas of pastries and other culinary items for her to concoct. “I told myself this is the perfect time to apply everything I learned in college and experiment new recipes at home. Last mother’s day, I baked this Spanish cake delicacy called Basque Burnt Cheesecake which originated in San Sebastian Spain and everyone at home loved it,” Melody shared to Flyhigh Manila.

She then turned this passion into a business where she get orders from her different customers from the airline industry and her personal network.

Melody’s best-sellers

According to Melody, Rolling Pin PH’s bestseller is her Basque Burnt Cheesecake which goes for P900 for 7” round cake. What makes this cake special is it’s a crustless cheesecake with a rustic burnt appearance while having a soft, smooth, rich, and custardy center.

Another best seller is her Strawberry Basque Cheesecake which goes for P1,200 for 7” round cake. You’ll love this even more than the plain Basque Cheesecake with generous amount of strawberries

The Decadent Dark Chocolate Cake is also something to try. Luscious layers of moist chocolate cake covered in decadent dark chocolate ganache. ​

Last but not least, try the Brown Butter Chocolate Chip Cookies with Sea Salt. A box of 6 costs 350 pesos. This is a classic chocolate chip cookie mixed in browned butter and Belgian chocolate chips sprinkled with flaky sea salt.

An opportunity in every set-back

There are always opportunities to grow in every setback, and the quarantine period was one of them. For Melody, the best way to make the most of any situation like this is to keep on looking for ways to make yourself productive such as doing a light work out, practice yoga and meditation, cooking a simple meal, cleaning the house, taking an online course etc. The key is to do an activity that you love and relaxes you.

It’s important to be tuned in ourselves, including our thoughts and feelings. This is a difficult time so please be patient and kind to yourself, as well as others. Connect with your family and friends. Reach out for help if you need it.

So to all our cabin crew facing uncertainties, know that even the tough of the toughest situations will present you opportunities to help you move forward. Do not forget that God consistently “arms” you with “weapons at your disposal” to survive and move through every situation. You just need to learn how to use these tools.
